The gemstone crab is good as there is little downtime and you are constantly attacking, additionally, it has no defensive stats which means you will hit nicely on it!
 
There is a trade-off in that there is a small 12% reduction in XP but it is still by far a more efficient AFK training method as opposed to rock or sand crabs.
